The Shoreditch Trust's Water House restaurant on Orsman Road, Shoreditch opened on 25 February.
Situated on Regent's Canal, the restaurant uses hydro-electric power to minimise carbon emissions and the natural heat from the canal combined with heat pump technology to provide heating and cooling. Hot water is provided by roof-mounted solar panels and photovoltaic cells produce electricity for the restaurant. All cooking at the Waterhouse is powered by hydro-electricity.
The Waterhouse also produces its own bottled water on site, has a wormery for raw food waste and a system for converting cooking oil into a compostable substance.
All profits from the restaurant will go back to fund community development.
